I asked my friend to send me the recipe for this cake. She directed me
to this video. While watching it I thought the cake looked familiar.
When I saw you assembling it I finally realized that it was THE cake
that I so very much enjoyed at Toni's wedding. Not only was it
beautifully done but it was absolutely delicious. Mind you, this is
coming from a hard core carnivore. Nevertheless, I will be making a
smaller version of this cake for the holidays and loving it. Bravo!
A Slice of Inspiration

I considered myself to be a healthy person, with an interest
in incorporating more raw, organic foods into my lifestyle and learning more
about the preparation. I registered for one of Kim and David Hostetter’s Raw
Food retreats, even though it was fairly close to home, my husband and I rented
a hotel room so we could have the experience of fully retreating for the
weekend. Unfortunately, I had indulged in a traditional holiday travel trip
preceding the retreat and I awoke the morning of the first day with a massive
migraine. Due to the three-day-long headache I was only able to attend short
segments of the retreat, but one of those segments included an experience that
changed everything for me.
It was just
a slice of cucumber, a simple slice of inspiration in a demonstration on
alkalinity versus acidity. A healthy body is an alkaline body, so what do I eat
that is acidic. There it was at the top of the list…coffee. NOOOO, I can’t give
up my coffee. I have tried, I need my coffee. I was willing to dilute my
morning coffee with the coffee substitute Teeccino; but I just couldn’t and
didn’t want to give it up. Coffee represented so much more to me than a mere
morning dose of caffeine, it was social, it was fun and it was tasty. I would not give it up.
I thought;
why not just add more alkalinity into my diet to offset my beloved acid-based
morning brew. I invested in a new high-powered juicer and began my mornings
with a glass of juice that included organic cucumbers–my slice of inspiration,
carrots, celery and one apple. In addition I blended almond milk with avocado
and other organic veggies. And then it happened, one morning I noticed that
after having my juiced drink and blended beverage, my coffee had turned cold
and unappealing. How could this be? After several mornings without any
withdrawal headaches, I realized, I no longer “needed” the coffee. I was free.
I removed the coffee maker from my counter to make more room for the blender
and juicer. I am FREE!!
A slice of
cucumber changing the alkalinity on a pH strip had changed my life; it had
given me the slice of inspiration I needed to make one more move toward a
healthier me, naturally. A baby step in the right direction is what so many of
us need; a small step with encouragement and support along the way.

Everyone got SO much out of it. It was
everything I expected it to be. Very informative and the demo's
showed me how doable going raw is!
We are very thankful for all you did in bringing the invaluable
knowledge and experience of eating Raw and it's benefits into a
workshop that was accessible to us! I still can't believe we were
able to attend as a family! Doing so will really accelerate our
transition to Raw with everyone on the same page.
We had a lot of 'ah ha' moments, ... I'll let
them write their own blogs to you about them. Our whole ride to and
from both days were full of us talking about all we learned and how we
wanted to encourage each other to do our best to be 80/20! I am
personally so thankful that the enthusiasm I've been garnering about
eating healthier has caught fire to all of them. This couldn't have
happened without you two!! Your tried and true expertise, initiative,
and mass accumulation of knowledge on the subject was priceless!
Your heartfelt dedication to teach what you know to others shows your
passion to help people!
I'm so happy Scott's 'ah ha' moment is that he
doesn't have to have meat to get protein. That was a pretty profound
revelation for a big meat and potato man! For Eric I am so thankful
his eyes are opened about needing greens, especially since I know he
will willingly give up milk and cheese, his 2 biggest addictions, due
to the animal cruelty involved in them. That was the final draw for
him!

Since I over came 10 years of severe pain and misery, as I was
going to a pill pushing Doctor, who only was interested in having me
on 31 pills a day. It was over $ 900.00 a month and I have Medicare
plus and supplement insurance too.! The only thing that happened was, I
kept getting worse....I won't go into all the reasons for all the
pills, the first one was a Cholesterol pill, and the side effects
kept getting worse and he gave me another pills to help relieve the
side effects. But the sicker I got the more pills he gave me.I left
his office one day, went home and just felt as if it would be better
to just die. Instead, I threw all the pills in the toilet....and flushed them
away. I got up and cleaned out my pantry and the freezer. I called my
daughter to come over and told her, if she did not want any of it
please take to the Habitat or something. Then I went to the grocery
store and bought just organic vegetables and fruits. I started that
very day to be a very strict Vegan. Being lactose intolerant helped
because I was used to staying away from milk and milk products. Within 3 weeks the pain was gone! After the next 2 weeks all the
IBS symptoms disappeared! I have not had one day of any problem
since. Now that is really a great feeling.! Losing weight, feeling
better, having more energy, and being able to go everywhere with out
the wheel chair or walker or cane..was miracle..
The change of diet and getting to feel wonderful every single day
should be the aim of everyone. I talk to everyone can about how to
change and how to get started. So I would be so very pleased and
honored that you would like to use my testimony.
The Almond Blossom people are wonderful. ! I first went there
the night that Dr .Malkmus came to Flager beach, and everyone was so
helpful and friendly. I go back as much as I can, and also take
friends with me for lunch.Thank you again.

...As for the Raw Foods Workshop--it was one of the most
worthwhile events I have ever attended. I was very inspired by the
wealth of information from you and Dave, and enjoyed the delicious
meals (I promptly lost 3 pounds within a few days afterwords).
Yesterday I donated my two coffee pots and coffee, although I felt a
little guilty passing on something that is not really healthy. I am
slowly setting up my kitchen from watching your video, which, by the
way, was much better than the fancy one about the PH balance diet.
You have a knack for teaching and entertainment, and you certainly put
your heart and soul into the weekend event. I'll be singing your
praise whenever I have the opportunity, and will consider it health
witnessing.
Two little bits of info: 1) During WWII in England, there
was not enough meat to feed the big cats in the zoos, so they were
fed grains, and became docile. 2) The lifespan of man greatly
declined in the Bible after man started eating animals. I'm sure
you've read that. Isn't that interesting and certainly validates the
reason for being vegetarian, I think.
After the workshop on Saturday I began reading your book
and finished it. Kim, it is so well-organized and easy to understand,
and, of course, sprinkled with your good sense of humor. I was
impressed and glad you signed and personalized it for me because it
will stay in my kitchen for reference. Let me know when you put
together a recipe book, which doesn't have to be big--a booklet would
do.

I drove from Fort Lauderdale, Fl to Flagler Beach on
December 7th to attend the first 3-day workshop given by Kim and Dave
Hostetter. I had been diagnosed with liver cancer and wanted to
change my eating habits to improve my immune system in order to fight
cancer. Little did I know they offered more than food changes!
I learned so much in that workshop…not only about food but
about health and life…there was also a spiritual aspect to it which I
found most comforting. (Today the nodules in my liver have shrunk).
I would encourage anyone to attend a workshop given by Kim and
Dave and learn how to live a better lifestyle and give your body the
best possible chance of living a long and fruitful life.

Debra's Story:
My mother and other members of my family, were diagnosed with
diabetes in their thirties and very overweight. In my twenties I was
told I was borderline diabetic and that I needed to lose weight and
keep it off or I would become a diabetic. So almost all my life I
have been on one diet or other, and I have tried them all. I have
lost weight many times and have always gained it back plus more. When
I turned forty two, I said no more and stopped dieting and excepted
that I would never be a normal weight. I always ate what I thought
was good and always got lots of exercise. I am now forty seven and
for the last year I have been feeling light headed and faint at times
throughout the day. I knew I had to do something but what? Then I
heard about Doctor Young's book the PH Miracle, by a really great
couple at a festival one day early in 2007. David, the guy at the
festival, told me his story of how this program helped him and saved
his life and how he lost weight. I really felt he was a sincere and
honest person. So I bought and read the book and it made more sense
to me, than anything I have ever read on health and weight lose
before. I started on Doctor Young's program only ten weeks ago and
already know I will make this a lifestyle and I no longer am afraid of
becoming a diabetic. I have lost fifteen pounds and already feel
great. I no longer have the bad feelings of light headedness and
dizziness. I did go through a period of detoxifying, for about three
weeks I had headaches everyday and some really bad constipation. But I
am through all that now and looking forward to a life of good health,
good food and smaller clothes. Thanks to this program, I know I can
make my dreams come true.
